Sambal Belacan Squid Fried Rice

Nasi Goreng Sambal Belacan Sotong




1 small bowl of cooked white rice
1 garlic, chopped finely
1 1/2 tsp sambal belacan
1 egg, lightly beaten
1 tbsp fried anchovies
3 squids, cleaned and cut into rings
1 to 1 1/2 tbsp sweet soy sauce
2 tbsp julienned carrots
1 tbsp frozen green peas (can replace with long beans also)
salt to taste (only if required)




Heat oil, saute garlic until aromatic, then add in julienned carrot and squid and stir fry until carrot softens. Add in rice and combine well. Add in soy sauce, sambal belacan and peas. Mix well. Push the rice to the side, add a bit of oil, break in the egg and give the egg mixture a stir. Leave for a few seconds. Push the rice on top of the egg mixture. Spread the rice a bit. Then quickly scramble the egg with the rice. Add salt to taste.  Break the fried anchovies into smaller parts. Then sprinkle the fried anchovies on the rice and stir well. Garnish with chopped onions.
