3 1/4 rice cooker cup rice
11gm ginger, julienne
5 screwpine leaves, knotted
3 1/2 cup (standard measurement cup) coconut milk
1 small piece rock sugar
salt to taste
Wash and soak the rice for 2 to 3 hours. Then drain the rice and steam it with ginger and 2 knotted screwpine leaves for about 6 to 7 mins. Use a fork to make it fluffy. Transfer the steamed rice onto a bowl. To the rice, mix in coconut milk, salt, rock sugar and knotted screwpine leaves. Close with a lid and leave it in room temperature for about 20mins or until the coconut milk absorbed into the rice.
Then transfer the rice again to the steamer based with a banana leaf. Spread the rice and steam for 10 to 15mins or until rice soften according to personal preference. Use a fork to make it fluffy. The rock sugar helps to make the grain to not stick to one and another.
Transfer to a bowl and serve with sambal and other condiments.
