Thai Style Fish Cutlet


I had wanted to try out a Thai Style cutlet for some time , and after browsing the net and my experience in cooking , have tried this cutlet.The cutlet is full of spice and herbs and hope is to your liking ! 













Ingredients:

·          1kg Spanish mackeral (or any white fleshed fish)
·         2 large potatoes(boiled)
·         6 kaffir lime leaves, snipped into thin strips with scissors
·         3 Tbsp. coconut cream powder or coconut milk
·         2 Tbsp. fish sauce
·         1/2 tsp.  shrimp paste
·          1 Tbsp. chili powder or more
·         1/2 tsp. ground cumin
·         1 tbsp . ground coriander
·         1/2 tsp. brown sugar
·         3 green onions, chopped 
·         1 thumb-size piece galangal OR ginger, pounded
·         3 cloves garlic,chopped
·         1 red chili, chopped
·         1 handful chopped coriander leaves
.         2 tbsp corn flour
·         oil for high temp. frying
·         To SERVE: Thai sweet chili sauce, lime wedges, handful fresh coriander

    Mashed the boiled potato .Microwave the fish flesh until soft. In a bowl, mix in all the ingredients.Make into round patties and deep fry in semi hot oil until golden brown.Fry three patties at a time.Dish out in a kitchen paper towel to drain excess oil.Serve with chilli sauce,lime wedges and fresh coriander.
