Mini Sambal Pizza

As usual am using KawanKu Pastry Squares.A savoury dish suitable for tea-time.



Ingredients
3 puff pastries
5 tbsp tomato sauce
grated mozerella cheese for topping

Filling
1 cup boneless chicken(chopped)
4 shallots
1 tbsp chilli paste
0.5cm shrimp paste
1 tbsp chopped spring onions/parsley


Preparing the pastries: Sprinkle flour in rolling surface.Take a pastry and flatten it with a rolling pin.Roll until you get a rectangular shape.Cut it half.If dough sticky add flour.Do the same with the rest of the pastries.(You can use a round cutter if you want the pastries to be rounded in shape.But its difficult for me to roll back the leftovers from the round pastries with this type of pastries .In making it square am not wasting the pastries).You will get 6 pieces.Refrigerate the pastries for 30mins.

Filling: Pound shallots and shrimp paste together until fine.Heat the wok with 2 tbsp of oil.Saute the pounded ingredients and chilli paste until fragrant.Add sugar to taste. Saute further.Add in chicken and stir.Let the spices combine well with the chicken .Leave to simmer until chicken is cooked.If the paste is too dried,just sprinkle some water.Taste before adding salt.Finally add in chopped onions and dish out.Leave to cool.

To prepare the pizza: Preheat oven 180C.Grease the baking pan lightly.Place three pastries at a time.If pan is bigger you can add in more.Spread tomato sauce on each pastries all around.Place some filling in the middle.Sprinkle grated mozzarella cheese .You can add the cheese now or 10mins after baking. Bake the pastries for 22 mins.Leave to cool for 10mins before serving.
