Apricot Custard Stars

I recently got my hand on puff pastry.I bought a packet of Kawan Puff Pastry Square which had 10 pieces of 10cm x 9.5 cm square pastries.


Tried making a few delicious treats for coffee and tea time.

Ingredients

4 puff pastries(thaw at room temperature for about 8-10mins)

For decoration
Halve red cherries
Jam to glaze (heat 1 tbsp apricot jam with 1 tbsp water for a few seconds)
Icing sugar to dust

Custard filling

1 tbsp caster sugar
1 tbsp cornflour
1 egg yolk
2 tbsp apricot jam (or any other jams)
½ cup milk


In a small pan combine sugar and cornflour until smooth,gradually whick in the combined egg yolk and milk.Whisk over low heat until the mixture thickens.Transfer to a bowl ,cover with plastic wrap and refrigerate .

Grease baking trays with melted butter .Follow the steps below to prepare the stars.There are two ways that you can prepare. Use the whole 10x10 cm squares or quarter the squares to mini squares.In that way you will get 4 small stars with each squares.Frankly it looked cute.I have done both ways.

Note: Throw some flour at the rolling board and flatten the pastry slightly with a rolling pin.I felt it help in lessing the moisture in the pastry.


Follow the method below to prepare the stars:


Make diagonal cuts from each corner to within 1 cm of the center
Place a heaped tsp of filling in the center of each square.
Fold one corner of each cut section into the center
Secure with beaten egg
Decorate with halve cherry
Cover the pastries loosely with plastic wrap and leave in a warm place for 20 mins.
Preheat oven 200C.
Glaze the pastries with beaten egg before baking.Bake for abt 12 mins or less depend on the size of the pastry.Leave pastries to cool .Glaze with jam glaze and dust lightly with icing sugar before serving.



The smaller version:Quarter each pastry and follow the same method.
