Turmeric Fried Rice

 





500g cooked rice
2 eggs, lightly beaten
87gm chopped onions
20g chopped red chillies
25g chopped spring onions
4 large cloves garlic, chopped
1 1/2 tsp turmeric powder
1 tbsp oyster sauce
1 tbsp caramel dark soy sauce
Juice of 1 lime
90g green peas
salt and sugar to taste


Marinate  for 15mins
210gm chicken pieces
1 tsp olive oil
1 tsp sesame oil
1 tsp white pepper powder
1 tsp oyster sauce
2 tsp sweet soy sauce or 1 tsp caramel dark soy sauce




1)Marinate chicken pieces with olive oil, 1 tsp olive oil, sesame oil, white pepper powder, oyster sauce and caramel dark soy sauce for 15mins. Then shallow fry in a pan with some hot oil. Dish out.
2)In the same pan, (add oil if needed) pour in beaten eggs. Scramble the eggs and dish out. Keep aside.
3) In a pan or skillet, heat 3 tbsp oil and saute chopped onions and red chillies until aromatic. Then add in chopped garlic. Stir for about 2 mins.
4)Then, mix in cooked rice and mix well. Add turmeric powder, soy sauce, oyster sauce, and chopped spring onions. Mix well.
5)Add in the chicken pieces and lime juice. Mix well so the ingredients are well incorporated.
6)Finally, add in green peas and scramble eggs.
7)Add salt and sugar as per required. Mix well.
Dish out and serve.
