Cookie Dough Base:
240 g (1 cup + 1 tbsp) Unsalted Butter, room temperature (I
used Anchor)
60 g (4 tablespoons) Cream Cheese (Mascarpone or Philadelphia
cheese), chilled
150 g (2/3 cup) Caster Sugar
2 teaspoons Vanilla Essence
1/8 Salt
55 g Egg White (from about 1 ½ egg)
300 g (2 ½ cups) All Purpose Flour
Purple Velvet Cheese Piped Cookies:
150 g of Cookie Dough Base
About ½ teaspoon Purple Food Coloring
3 teaspoons All Purpose Flour: it depends how much food
coloring you’ve added
Cut-Out Purple Velvet Cheese Cookies:
About 300 g (10,5 oz) of Cookie Dough Base (the half of
cookie dough base leftover)
About 1 teaspoon Purple Food Coloring
About 4 tablespoons All Purpose Flour: add gradually until
the dough will pull away from the bowl and won’t stick to your fingers.
Cut-Out White Cheese
Cookies:
About 300 g of Cookie Dough Base (the half of cookie dough
base leftover)
About 30 g (2 1/2 tablespoons) All Purpose Flour: add
gradually until the dough will pull away from the bowl and won’t stick to your
fingers.
Decorations:
Purple, White and Blue sprinkles
Melted white chocolate
Blueberry Jam
Purple Velvet Cheese Piped Cookies
For these cookies, get a softer but firm dough. It should be
soft enough for you to pipe out from a piping bag using rosette nozzle.
Refrigerate until you bake.
For
Purple Velvet Linzer Cheese Cookies and Purple Velvet Cheese Doughnut and Heart Cookies
Take about 150g to 200gm of the white dough and use cutters
to get a base. It depends on how many designs you want to do. You can use more
dough or lesser. Advisable to roll out to 0.6cm and ¼ in thickness. Use the
desired cookie cutters to make shapes.
Take about 150gm of purple dough and use cutters to get a
base for the purple coloured linzer cookies. Advisable to roll out to 0.6cm and
¼ in thickness.
For Linzer cookies, sandwich the baked white cookies with
blueberry jam and purple cookies with melted white chocolate.
While for the doughnut cookies, deep in white chocolate and
sprinkle with coloured sprinkles. For the heart shape cookies, deep partially in melted white chocolate and sprinkle with some almond nips.
Purple Velvet Spiral Cheese Cookies and Purple Velvet
Star Cheese Cookies
Roll out equal amount of red and white dough. Place the flatten
white dough carefully on top of then purple dough. Then cut out in a rectangular shape. The leftover
dough or scrape to make marble cookies.
Roll one end of the dough up to the end. Roll and wrap in a
baking paper and keep refrigerated for at least 1 to 2 hrs or until the dough
is firm to slice out, ¼ in with a knife.
For the left-over scraps, roll and cut out using the desired
cookie cutters. I used small star shapes.
Bake all these cookies in a 170C preheated oven for about 8
to 12mins depending on the size and thickness. Leave to cool before decorating.
Use your creativity to design and decorate the cookies.
