Brownie Tarts

 






All ingredients should be in room temperature and dried ingredients must be sifted.

Tart shell

60 gram icing sugar

120 gram butter

1 tsp vanilla essence

1 egg yolk

250 gram flour

 

Mix sugar and soft butter together and beat well, add in vanilla essence and egg yolk. Beat for another 1 to 2mins then finally add in flour. Mix well with a spatula. Make it into a dough. Then take a bit of dough and flatten in tart moulds. Prick the shell with a fork and refrigerate the unbaked tart shells. We proceed to do the brownie mixture.

Note: I used 4.5cm tart moulds and made 45 tarts. Coat the moulds with butter before pressing in the dough.

Once baked, you can either knock lightly the side of the tart moulds or take a tooth pick and lightly press at one edge of the baked pastry tart and it will come out easily. 

 

Brownie Mixture

75 gr Dark Chocolate 70%cocoa (3oz) – (I used Lindt dark chocolate)

75 gr Butter (2/3 stick) – (Anchor)

100 gr Sugar ( 1/2 cup) –

50 gr Flour (1/4 cup + 1 tbsp) –

20 gr Cocoa Powder (3 tbsp) – I used French Cocoa powder

2 Medium Eggs

1/2 tsp baking Powder (Add only 1/4 tsp if you want a denser texture)

Pinch of Salt

 

Decoration

Almond nips for decoration

Melted chocolate for decoration

 

Melt butter and chocolate in double boiler/microwave and stir every 30secs if microwave. Give a stir until chocolate is smooth texture, then add in cocoa powder and stir well. The heat from the choco-butter will bloom the cocoa powder and give an intensified flavour to your brownies. Then add in the sugar and mix well. After that, add in 2 eggs and stir well. The mixture will be thicker at this stage, then finally add in flour mixed with baking powder.

Pour a spoonful into the tart shells. Decorate with some almond nips. Bake in preheated oven 175C for abt 10 to 15mins, depending on the size of your tarts. I am using 4.5cm size tart moulds. If you are using larger tart moulds, then bake it for abt 20mins. You can check if the brownies are done by pricking with a toothpick in the center of the brownie. If the toothpick comes out clean, then the brownies are done. Cool for 15mins. Then drizzle with melted chocolate.
