Si Chuan Basil Chilli Prawns







160g prawns (cleaned)
15gm bottom part of the spring onions
30gm sweet basil leaves
14gm ginger, julienne
5 gm roasted sze chuan peppercorns (grounded)
1 tbsp honey
1 tbsp light soy sauce
1/2 tbsp Chinese cooking wine (optional)
5 dried red chillies
2 g chopped garlic
3 tbsp flour

Marinated prawns with
1 tsp honey
1 tsp sweet soy sauce
a few dashes of white pepper powder
1 tsp sesame oil



Deep each marinated prawns in flour and shallow fry it. Kee aside.
In the leftover oil, add in ginger and the bottom part of the spring onions. Give a quick stir, then add in dried chillies and stir fry. Then, add in light soy sauce, grounded peppercorns, honey, cooking wine and salt and sugar to taste. Throw in the basil leaves and stir well until the leaves soften. Dish out and serve with rice.
