Chicken and Egg Char Fried Kway Teow Noodles







50gm kway teow noodle
6gm spring onions chopped 1/2 in
2 small eggs (beaten)
a few minced sweet preserved radishes (optional)

Marinate:
30gm chicken meat
1 to 2 tbsp light soy sauce
1 tsp oyster sauce
1 tsp dark soy sauce







Heat a wok until it smokes. Then add in 2 tbsp oil. Add in the chicken along with the marinade. Spread the chicken pieces as you cook. Once the chicken is cooked, push the chicken to the side of the pan, add a bit more oil and add in kway teow in the middle. Stir the kway teow so that it chars along the edges, it will be smokey, but the noodles will taste good at the end. Mix all the ingredients together, then let it cook further, then spread the beaten eggs all along with the noodles. Sprinkle the spring onions and pickled radish. Flip part by part of the noodles so the eggs are coated. Taste if need to add salt or sugar. As I am using salty light soy sauce I am not adding salt. Once the eggs are cooked, you can serve immediately.
