Sapphire Shortbread Cookies





250gm butter at room temp 1 cup castor sugar or icing sugar ½ cup oil 1 cup cornstarch 1 tsp vanilla essence 3 to 31/4 cups all-purpose flour
a few drops of blue colouring

Preheat oven at 170C

Mix butter and sugar well. Then add in vanilla essence and oil. Combine cornstarch and all-purpose flour. Add the flours bit by bit until well incorporated with the butter mixture.
Take a quarter of the dough and mix it with blue colouring. The rest leave it plain.

Follow the steps shown in the image below:

Place a silver dragee in the centre and place blue dragees all around.



Leave space for the cookies to spread. Bake the cookies for 15 to18mins.
