1 packet potato chips
200gm minced chicken
1/2 a medium onion, chopped
1 tbsp tomato sauce or tomato puree
1 tsp chicken curry powder (optional)
150g Prego Bolognese Sauce
3 tbsp grated mozzarella cheese
2 tbsp grated cheddar cheese
sugar to taste
Dried Herbs
1/4 tsp basil
1/4 tsp oregano
1/4 tsp rosemary
1/4 tsp thyme
Heat a wok with olive oil, saute chopped onions, then add in minced chicken and cook until minced chicken is apart, break with a spoon for it to not stick together. Then mix in bolognese sauce, tomato sauce, chicken curry powder and cook until the chicken meat is well coated with the sauce, add in the dried herbs and stir further if preferred mix in about 2 tbsp of water. Add sugar to taste. If you are using potato chips coated with salt and flavour, do not add salt to the gravy. If you are using unsalted potato chips, then add salt to taste. The sauce must be slightly dried and not too watery, as then the chips will turn soggy.
To assemble: On a serving plate, spread out the potato chips, spread the chicken bolognese sauce all over the potato chips. Sprinkle the grated cheddar cheese, followed by grated mozzarella cheese. Microwave for less than a minute until the cheese melts. You can garnish with some fresh herbs. Serve immediately.
