3 large ready-made fried tauhu /tofu
1/4 tsp turmeric powder
1/2 tsp tamarind juice
1 tbsp tomato sauce
1in cinnamon stick
1 egg (beaten)
1 sprig curry leave
1 1/2 tbsp sugar
salt to taste
To grind into a paste
4 to 5 dried red chillies( soaked in hot water for 15mins and drained)
1in shrimp paste
1/2 tsp dried prawns (soaked in hot water 10mins and drained)
1 small garlic
4 pink shallots
Cut the fried tauhu into small pieces.
In a wok, heat about 1/4 cup oil, saute the grind ingredients until fragrant, then add in tauhu, turmeric powder, cinnamon stick, tomato sauce and tamarind juice. Stir fry until ingredients are well combined. Add 1/2 cup water and gently simmer. Mix in salt to taste and sugar. Fry lightly until the dish is slightly dry. Pour the beaten egg all around the ingredients and leave for a few seconds. Then gently scramble, be careful not to break the tauhu. Leave to cook in low flame until you get a dried dish. Throw in curry leaves and mix further. Dish-out and serve as a side dish with rice.
