Homemade Yangzhou Fried Rice





1 bowl cooked jasmine white rice
1  tbsp chopped spring onions
3 tbsp light soy sauce
1/2 tsp grounded white pepper powder
1 tsp Chinese cooking wine (optional)

1 pork sausage (cut into small pieces)
1 meatloaf (cut into small pieces)
1 egg (beaten)
2 tbsp green peas

1 nip garlic (chopped finely)
1 spring onion (the bottom white part, cut thinly)
salt and sugar to taste

Hot the wok , once there is smoke coming, add in 2 tbsp oil, pour in the beaten egg in a spiral way, and stir fry quickly, push the egg to the side, add in sausage and meatloaf, and stir fry further, add a bit more oil if needed, then saute in garlic and the white part of the spring onions. All these steps need to be done in a fast mode. Then add in cooked rice, and mix well with all the ingredients Sprinkle pepper powder, the light soy sauce, followed by cooking wine. Stir fry until all the ingredients are well combined. If the rice dish is too dry, sprinkle some water, to have it slightly moist. Add a bit of sugar and be careful with the salt. If the light soy sauce is salty, then you can omit the salt. Finally, add in green peas and mix well. Dish out and serve.  I have omitted the green peas as my son doesn't like it.

Note: You can omit pork sausage and meatloaf, and replace it with chicken meat and prawns.
