Thai Chinese Sausage Fried Rice



1 bowl of cooked white rice (overnight rice would be better)
2 nips chopped garlic
1 or half string of Chinese/pork sausage, thinly sliced
4 to 5 prawns, deshelled 
A handful of bok choy, cut into small parts
2 tbsp of julienne carrots
1 egg, beaten lightly
1 medium onion, thinly sliced
1 tbsp or more light soy sauce
1/4 tsp dark caramel soy sauce ( can add more if want darker)
1 tsp fish sauce
a bit of sugar
salt to taste (depending on the saltiness of your light soy sauce) or msg

Garnishing
some chopped red bird eye chilies
some chopped spring onions
some fried garlic
some fish crackers
Spicy Soy sauce (can be purchased readymade in a bottle)
