Orange Suji Cookies

I used standard measurement cups and spoons for this recipe.




 

2 1/2 cups of plain flour
1/2 cup plus 1/3 cup of icing sugar
1 cup melted ghee
1/2 tbsp baking powder
1/4 tsp baking soda
2 tsp Sunquick orange or 2 tbsp fresh orange juice
rind of one orange
a few drops of orange coloring (optional)
Decoration: orange peels

Combine all the dry ingredients in a bowl. You can lessen on the icing sugar if you want. Mix in orange rind and juice. Bind together the flour with melted ghee. Once you feel that the dough is not sticky to the hand then you are ready to shape into small balls. 

Grease a pan with butter and with some flour or use a baking sheet. Take a bit of the dough to make a small marble. Do the same until all the dough finishes. Coat your hand with some ghee if the dough is sticky. You can use cookie cutter too. But I prefer to make it into small marbles. It looks rather cute.  Finally, decorate it with orange peel in the center.
Bake the cookies in preheated oven 180C for 10-15 mins depending on the size of your cookies. Once cooled store in airtight container. The longer the cookies are stored, the tastier it gets.
