Mild Yellow Curry Powder

     


Ingredients A
30 gm cardamom
30 cloves
2 bay leaves
2 in 2 sticks of cinnamon
4 -5 maze
50 gm cumin seeds
50 gm coriander seeds

Ingredients B
30 gm Kashmiri chili powder (can buy from Indian grocery stores)
115 gm turmeric powder
30 gm ginger powder
1 tbsp mustard powder
             
Dry roast ingredients A in low heat until aromatic. Leave to cool.
In a mixer, ground all the roasted ingredients until fine. Then mix  Ingredients B.
Keep in an airtight container.

You can use this powder for mild vegetable curry or even for chicken curry.
This mixture goes well with stir fry too!
I have shared a simple cabbage stir fry using this powder.

Cabbage Stir Fry

250 gm cabbage, sliced thinly
1 small garlic, chopped
1 small onion, chopped
a few slices of green chilies
2 tsp mild yellow masala powder
salt to taste
curry leaves


Heat a wok with 3 tbsp oil. Saute garlic, green chilies and onion until aromatic. Then add in cabbage and stir fry in low heat. Add in masala powder and salt. Stir fry until cabbage has soften. Throw in curry leaves. Serve as a side dish with rice.
