Prawns Fry_Chemmeen Roast

Ingredients A
350gm prawns, cleaned and devein-ed
2 tsp tamarind paste
2 tsp ginger garlic paste ( 2 cloves garlic and 2 in ginger)
1/4 tsp turmeric powder
2 tsp coriander powder
2 tsp chili powder
1/2 tsp freshly grounded black peppercorns
salt to taste

Mix all the ingredients and marinate for 30 mins.

In a hot skillet, add in the marinated prawns, sprinkle some water and leave to cook until all the masalas are well incorporated. Keep sprinkling water from time to time. Once fully dried, close fire. Dish out.

Ingredients B
1 medium onion, sliced thinly
1/2 tsp turmeric powder
4 dried red chilies, coarsely powdered in a mixer
curry leaves
a bit of sugar
salt to taste

In a clean skillet heat 3 tbsp oil. Saute sliced onions until lightly brown. Then add in the coarsely powdered chili, followed by turmeric powder. Saute until ingredients lightly incorporate. Then add in the cooked prawn. Stir fry until all ingredients are well combined. Add in sugar and salt to taste. Finally mix in curry leaves and fry until dish is dry. Serve with white rice.
