Potato Crusted Quiche

Sharing the way I prepared it. 
Indeed a dish that can be served to your guests for any occasion. 
Its easy to prepare however, it does take some time for baking.




500 gm Washington potatoes, cleaned, peel the skin, and cut in thin oval sizes(use a mandoline if you have one)
2-3 tbsp olive oil
1 tsp freshly grounded red peppercorns/black peppercorns
1/2 tsp salt to taste
2 tbsp grated cheddar cheese (I used cheddar as I didnt have Parmesan)

Mix all ingredients in a bowl, arrange each slices of the cut potatoes in a circle on a greased pie plate
Line the side with overlapping potatoes as well. Bake in preheated oven 450F for 15mins 


Filling:
5 eggs
3/4 cup fresh milk
1/2 grated cheddar cheese
1/2 cup grated mozzarella cheese
1 cup capsicum, cut into cubes
1/2 cup chopped tomatoes, discard the pith
1/4 cup chopped spring onions
1/4 cup chopped red onions
1 tbsp chopped garlic or 1 tsp garlic powder
1 tsp grounded red peppercorns
salt to taste
2 Italian frankfurters (I used Ayamas brand)
1 tbsp honey


Half the frankfurters and cut thinly. Heat a skillet, with a a few drops of olive oil. Lightly fry the frankfurters and mix honey. Saute until frankfurters turn lightly brown. Close fire. Leave a side.
In a big bowl, beat the eggs  lightly, mix in milk and beat further. Add in chopped garlic,salt and grounded peppercorns. Mix well. Then add in all the ingredients one by one, including frankfurters and stir well. 
Pour into the baked crusted potatoes and bake at 180C for 30mins or until set. Let cool for 20mins before slicing and serving.  

Note: Can serve with chili sauce.
          I used standard measurement cups.
