1/2 cup coriander seeds
1/8 cup cumin seeds
12 pods green cardamom
2 pods black cardamom (optional)
1/2 tsp black pepper seeds
1/2 tsp fennel seeds
2 large star anise
2" 2 cinnamon sticks
1 bay leaf
Discard the skins of both cardamom pods. Use the seeds only. Keep aside.
Break the nutmeg, and take out the seed. Break the seed into pieces. Keep aside.
Break the cinnamon sticks,star anise into pieces. Keep aside.
Tear the bay leaf into a few parts. Keep aside.
Heat a non stick pan, place all the ingredients in the pan. Stir fry in low heat until aromatic and
coriander turns lightly brown. Close fire. Leave to cool.
Once cooled, powder the spices until fine using a mixer. Store in an air tight container.
Use when needed.
