2 blocks firm beancurd/tofu, cut into small cubes
2 nips garlic
4 pink shallots
1/2 in ginger
1 egg, lightly beaten
2 tbsp chilli paste
1 tsp tomato sauce
1" cinnamon stick
sugar to taste
salt to taste
some chopped spring onions or curry leaves

Pound garlic, shallots and ginger into a paste.Keep aside.
In a non stick pan, add in 2 tbsp oil, fry lightly the tofu cubes until lightly brown.Dish out.
In the same pan, add another tbsp of oil, add cinnamon stick, followed by the pounded ingredients.
Saute for a minute, then add in chili paste.Saute until aromatic in medium heat.
Add sugar about 2 tsp and salt to taste. Stir to combine and dissolve. Add the tofu and mix to combine the chili paste. Spread the fried tofu on the pan, slowly pour the beaten egg all over the tofu, leave for a few minutes. Then slowly start scrambling the egg with the tofu. Stir until dried.Sprinkle with chopped spring onions or curry leaves. Serve as a side dish with rice.
