Dosa batter

oil or melted ghee to sprinkle
For the chili paste:
10 dried chilies (soaked in hot water for 15mins and drained)
3 nips garlic
7 pink shallots
1 tbsp tamarind juice
sugar and salt to taste
For the potato filling:
4 boiled potatoes
1/4 carrot, grated or julienne thinly
1/4 cabbage, shredded
1 green chili, thinly sliced
1 in ginger, chopped
1/2 an onion, finely chopped
1/4 tsp turmeric powder
1 sprig curry leaf
salt to taste
For dosa toppings
chopped tomatoes
chopped coriander leaves
chopped onions
