Spinach with dried prawns

Masak Lemak Bayam Udang Kering

200gm red spinach /bayam merah
1 tbsp dried prawns (soaked in water for 15mins and drained, pounded slightly)
1/2 green chilli, sliced thinly
2 nips garlic (chopped)
1 small onion, chopped fine
1 1/2 cup light coconut milk
1/2 cup thick coconut milk
salt to taste
some chopped red chillies, for garnishing



Wash and rinse the spinach. Cut the spinach into small parts. In a wok, heat 1 tbsp oil, saute chopped garlic, followed by onion and green chilli. Then add in dried prawns and saute for another one minute. Then add in spinach, give a few stir. Lower the heat and pour in thin coconut milk. Leave the spinach to cook in the coconut milk. Close and leave to cook gently.
Once the spinach has softened, add salt to taste. Then pour in thick coconut milk. Once there is about two to three bubbles, close fire. Garnish with red chillies and serve with white rice.
