Thai Basil Fried Rice




1 bowl of cooked rice
3 nips garlic (small)
3 bird eye chilies
a handful of sweet basil leaves
1/4 capsicum, cut small
some chicken pieces, thinly sliced
dash of white pepper powder
sugar to taste
salt(optional)

Sauces
1 tsp fish sauce
1 tbsp light soy sauce
1 tsp oyster sauce

I egg (side dish) optional





Pound chilies and garlic until fine. Keep aside. Heat a wok until smoky, then add in 2 tbsp oil. Add in chicken slices and fry it partially. Then add in pounded ingredients, and saute until aromatic. Mix in cut capsicum and cook further until soften. Then add in cooked rice, white pepper powder, sauces, andstir-fry. Add in sugar as well. A few minutes before closing fire, add in basil leaves. Mix to combine and until leaves are softened.  Cook until rice is dried and all ingredients are well combined.  Dish out.  For egg, heat a wok, and pour in 2 tbsp oil, once smoky, slowly break the egg on the hot oil, and leave to cook. Turn and leave to cook further. Fry until desired firmness is obtained. Serve with fried rice.
