Cookie Dough
250g flour
60g icing sugar
60g butter, melted
4 tbsp ice water (optional)
Filling
Masafii Lulu Dates
(the dates are very soft and can become a paste by using your fingers)
Additional icing sugar for coating the cookies
Method:
Sift dough and sugar into a bowl. Slowly mix in the butter till it becomes a crumbly dough. Add ice water to make the dough firm.
Take a bit of the date and crush it between fingertips and coat it with the cookie dough. Make into round shape. Do the same with the rest of the dough. You can use one date for 2 doughs.
Bake in preheated oven 170C for 20mins, depending on the size. Coat with icing sugar.
