350gm prawns
1 turmeric leaf, shred into a few pieces
2 tbsp sunquick orange
2 tsp tomato puri
1 small onion, quartered
salt and sugar to taste
Grind into a paste
8 dried red chilies (soaked in hot water for 15mins and then drained)
3 fresh red chilies
5 shallots
3 nips garlic
1in galangal
2in fresh turmeric
1 lemon grass
1in shrimp paste
Heat 1/4 cup oil, saute the grounded ingredients until oil floats on top, add in tomato puri and sunquick. Mix in salt and also sugar to taste. I added more sugar as when it caramelize, you will get a rich red colour for your dish. a few minutes before closing fire, mix in quartered onion and shredded turmeric leaf. Serve with rice.
