Rose Sagoo Pudding

Simple and fast to prepare rose flavoured pudding with sago pearls, a welcome during hot weather.

3 cups/750 ml water
1 cup /250ml sugar
1/2 cup/ 125ml evaporated milk
1/2 cup/125ml sagoo pearls
3 pandan leaves, knotted
11/2 tbsp corn flour mix with 1 tbsp water
1 tsp rose essence
a few drops pink colouring
(I used standard measuring cups)

Soak sago for 10mins. In a non stick bowl, heat water, sugar and sago together. Throw in pandan leaves as well. Leave to simmer gently until sagoo turns translucent. Then mix in essence and colouring. Discard the pandan leaves, and pour in evaporated milk. Stir well. Then mix in corn flour mixture to thicken the pudding. This will take about 8 to 10mins. Do use low flame in order not to burn the pudding. Pour into small pudding moulds or cups.Decorate as per your liking.Refrigerate the pudding for at least 3 hours before serving.
