Double Choco Delight

250gm butter
180gm brown sugar
2 egg yolks
300gm plain flour
30gm cornflour
30gm cocoa powder
1 tsp vanilla essence
1/4 tsp baking powder
1/4 tsp soda bicarbonate
1 tbsp almond nips

Melted chocolate to cover the cookies mix with vegetable shortening
melted chocolate two colours decorate on top with vegetable shortening

Sieve the dry ingredients in a bowl. Keep aside.
Beat sugar and butter until light and fluffy. Add in egg one at a time.Then add in vanilla essence. Slowly mix in the dry ingredients until well combined. The dough will be a bit sticky, so refrigerate it for 20mins. Then spread the dough onto a floured surface, and use a cookie cutter to cut into desired shapes. Bake in preheated oven 150C for 25 mins. Cool, coat the cookies with melted chocolate. leave to set. Then design as zig zap on top with coloured chocolate.
