Ayam Masak Lemak Cili Padi
This is a typical Malaysian dish cooked with a few ingredients only.
The dish is yummy, spicy and rich with coconut milk.Ayam means chicken, masak means cook, lemak stands for creamy and cili padi is bird's eye chilies!!So let's check out the recipe!
700gm chicken, cut into desired pieces
10-14 bird's eye chilies, green and red mixed
1 potato, cut into the desired shape
2 in fresh turmeric
2 lemon grass, bruised
2 medium size, pink onions, chopped very finely
2 turmeric leaves, shredded
2 cups of thin coconut milk
1 cup thick coconut milk
salt to taste
Pound bird's eye chilies, fresh turmeric until fine. Add a pinch of salt when pounding. Keep aside.
Heat about 2 tbsp oil, saute chopped onions until aromatic. Then add in pounded ingredients. Stir until aromatic and oil float on top. Then add in chicken,lemon grass and potato. Add thin coconut milk plus one cup of water. Stir and leave to simmer gently until potato softens.
Then add in thick coconut milk and turmeric leaves. Add salt to taste. Dish out and serve with white rice.
