1 medium size potato
1/2 a carrot
8 to 9 long beans
1/4 tsp turmeric powder
1/4 tsp chili powder
1 medium size onion, sliced thinly
1 nip garlic, chopped
a few slices of red chilies
salt to taste
1 sprig curry leaf
Cut potato,carrot, and long beans all in1/2 in length. Keep aside.
Heat wok, add in 2 tbsp oil, saute chopped onions and garlic. Then add in all the vegetables.
Add salt and keep stirring. In the beginning, stage, do not add water, keeps stirring in low flame. Spread the vegetables all around the wok to cook evenly. Do not close lid. Always keep checking and stirring so that the vegetables do not burn.Add drops of oil when needed. The idea is to cook the veges so that you will get a sweetness from the vegetables. Once about 10mins, add in the powders and stir fry further. Leave to cook in lo flame. Then sprinkle some water when necessary until the vegetables are cooked and soften. Throw in the curry leaf and stir. close fire and serve as a side dish.
