German Cookies

250gm butter (buttercup)
100gm icing sugar
250gm potato flour (I used Windmill brand)
150gm plain flour
1 egg white

Decoration: coloured sugar

Preheat oven at 160C.

Beat sugar and icing until fluffy, add in egg white and beat until well combined.
Then using a spatula, mix in sieved dry ingredients. If the dough is soft to handle, refrigerate it for an a few hours or overnight for easy handling. Take bigger than a marble size, roll and flatten it slightly (it will spread a bit once baked). Roll the edges of the dough with coloured sugar. Use a fork and make diamond shape on top. Bake for 15 to 20mins, depending on the size and thickness.  The cookie is a melting in the mouth , great with a cuppa of tea or coffee. A thumbs up for a festive cookie or one can bake for kids anytime.
