Mango Pajeri









Ingredients
2 ripe mangoes ( cut into small pieces)
1/2 tsp turmeric powder
1in cinnamon stick
1 star anise
3 cloves
2 cardamom
2 nutmeg (powdered)
1.2 cup thick coconut milk
1 tsp tamarind juice
2 tbsp kerisik
salt and sugar to taste

To grind into a paste
6 rose shallots
2 nips garlic
1/2 in ginger
1 tbsp dried prawns (soak in water for 15mins, drain )
1/2 in fresh turmeric
2 candlenuts

Heat abt 5 tbsp oil, throw in cinnamon stick,star anise,cloves, and cardamom. Once its starts spluttering, add in the grind ingredients and saute until aromatic. Add in tamarind juice, nutmeg powder, mangoes, turmeric powder and stir well. Add a bit of water about 1/4 cup and leave to simmer. Once thicken, add in kerisik and coconut milk. Leave to thicken , add sugar and salt to taste. Dish out and serve as a side dish.
