Chicken with pineapple Curry

200 gm chicken breast, cut into small parts
1 tbsp ghee
2 large onion, diced
1 1/2 tbsp chicken curry powder
1 tsp turmeric
1 small tin pineapple in syrup , or can use fresh pineapple
1 cup coconut milk
2 cups water
Salt to taste
2 tbsp almonds, toasted

Heat ghee, saute the onions, then add in curry powder and turmeric powder.Stir for 10mins until aromatic. Be careful not to burn the spices. Add more ghee if masala/spices  is/are dried. Add in chicken and stir for a few minutes. Pour in water , and pineapple and leave to simmer. Add salt to taste. Once the gravy thicken slightly, add in coconut milk and simmer further. Once you got the required consistency ,close fire.Add in toasted almonds. Serve with rice, bread, spring hoppers etc.
