small potatoes,deskinned and cut round
20gms groundnuts

turmeric powder

tamarind juice
3 tsp sugar
Salt to
taste
Soak dried chillies in hot water for 20mins. Drain.
Make into a paste the dried chillies,shallots,garlic and shrimp paste.
Separately, heat skillet with 1 cup of oil.
Deep fry thinly sliced potatoes until slightly crisp. Dish out on a kitchen towel.
Deep fry groundnuts until done.Drain excess oil,
Deep fry anchovies until crisp .Dish out and drain excess oil.
Discard the oil, leaving about 4 to 5 tbsp . Saute the chilli paste mixture until aromatic. Add in turmeric powder,tamarind juice, sugar to taste and salt. Keep stirring until the oil floats . Close fire. Mix in the fried potatoes,groundnuts and anchovies. Dish out and serve as a side dish with white rice. This sambal goes very well with dal curry or Sauropus androgynus/ pucuk manis/sweet leaf stew .
