200gms small
potatoes(I used cocktail potatoes)
Salt to taste1 ½ tsp olive oil
Spice and herbs
1 tbsp fried shallots/shallot crisps (pounded coarsely)
1 tsp dried parsley
½ tsp turmeric powder
1 tsp cayenne powder
1 tsp chilli flakes
½ tsp caraway seeds
½ tsp fennel seeds
½ tsp dried rosemary leaves
½ tsp dried thyme leaves
½ tsp dried basil leaves
Topping
1 tsp dried parsley
1 tsp shallot crisp
Discard the
skin of the potaoes.Halve it. Microwave for about 6 to 8 mins in salt water.
In a separate
bowl, combine turmeric powder,cayenne powder,chilli flakes,caraway seeds,fennel
seeds .dried rosemary,thyme and basil leaves . Pound coarsely all the
ingredients and microwave for about 2 mins .
In a bowl, add
in the boiled potatoes, pounded herb and spice, the parsley,shallot crisp and
olive oil and toss it .Season with salt. Garnish with dried parsley and shallot
crisp(pounded if desired).
If you are in
a strict vegetarian diet, you can omit the shallot crisp !
