Golden Pilaf Rice





2 cups basmati rice
1 large yellow onion,chopped
½ cup evaporated milk
150gms orange sweet potato ,grated
Salt to taste
½ tsp turmeric powder
A pinch of saffron
3 screwpine leaves,knotted




Soak basmati rice in water for 15mins,drain in a coriander and leave it to dry.
Heat a bit of butter, and saute the chopped onions until translucent .Then add in the grated sweet potato and stir for a few seconds. Add in basmati rice and stir for 2 mins. Transfer the rice to a rice cooker. Add in evaporated milk, turmeric powder,saffron , screwpine leaves, and salt to taste.Give it a stir. Pour in about 3 to 31/2 cups of chicken broth ,vegetable broth or water. Leave to cook. Once it turns to 'warm' .Open and give a stir. Serve as per preference.
