INGREDIENTS :
Okra/Ladies finger 1 kg.
Onion : 200 gms-chopped
Tomato : 200 gms
Green chilli : 3 -slitted
Ginger (juliennes) : 3 slices-chopped
Fresh Coriander : 15 gms
Turmeric powder : 10 gms
Cumin powder : 15 gms
Cumin seeds : 10 gms
Coriander powder : 15 gms
1 /2 tsp tamarind juice
Salt : to taste
Okra/Ladies finger 1 kg.

1 /2 tsp tamarind juice
Salt : to taste
METHOD : Wash the Okra and cut lengthwise in halve. Halve if further and make into 2 parts .Heat about 1 ½ oil in a pan, deep fry the okra partially and dish out.
Retain 2 tbsp oil,add the
cumin seeds and allow the seeds to crackle. Add in green chillies and
garlic as well. Stir for a few seconds .Add in ¾ of the chopped onion and tomato and sauté till it is cooked and soften and
the tomato turn mushy , and then , add the remaining dried masalas(coriander powder,cumin
powder,turmeric powder). Stir for a few seconds ,add about ½ cup water plus the
tamarind juice and leave to simmer .Once thicken ,Dish out.
Separately in a non stick
pan, add 1 tsp oil, sauté the left over onion partially and add in the tomato.Stir
for a few minutes.Add in the fried okra ,and the masala mix.(You can use half
of the masala or all the masalas.Left
over masala can be refrigerated and used for another day!)
Garnish with chopped
corander leaves and some toasted sesame seeds.
