Chetinad Vegetable Perattal

I got this really yummy recipe from you tube.A vegetarian  dish that goes well with rice or chappati.,





½ tsp fennel
½ in cinnamon stick
2 sprigs curry leaves(discard the stems)
1 medium onion(chopped)
1 large potato(diced)
½ a carrot(diced)
5 french beans ,cut into small size ,similar size to potato and carrot)
1 tomato(chopped)
½ tsp turmeric powder
½ tsp coriander powder
1 tsp or more chilli powder
¼ cup grated coconut(grind with a bit of water until fine)
½ cup water
Salt to taste

Method


Heat water, and boil the three vegetables until cooked. Sieve in a colander and keep aside.
Heat about 3 tbsp oil, add in fennel seeds and cinnamon stick. Then throw in chopped onions and curry leaves and sauté for a minute. Add in chopped tomatoes and cooked until tomato turns mushy. Add in coconut paste and stir, add in turmeric, coriander and chilli powder. Stir and add in ½ cup water. Now stir until the oil floats on top. Add in the cooked vegetables and combine well with the masala paste. Add salt to taste. Dish out and serve with rice or chappati.
