Malaysian Portuguese Grilled Fish

1 (500-600gm) pomfret
1 piece banana leaf
1 /2 lime (juice extracted)
½ tbsp dark soy sauce
Salt and sugar to taste

 Spice to be pounded
4  fresh red chillies (soaked in hot water,deseeded)
1 tbsp chilli powder/cayenne powder
4 candlenuts/buah keras
8 shallots,peeled
1 stalk lemon grass,finely sliced
½ in dried prawn paste/belacan
½ tbsp dried prawns/udang kering ,soak in water and drained
2 kaffir lime leaves/daun limau purut

Combine spice ingredients and make grind them in a smooth paste.
Heat oil, sauté the spice until fragrant in low heat. Add lime juice,soy sauce,salt and sugar.
Spread cooked paste over fish and wrap in a piece of banana leaf. Grill over glowing charcoal or bake  in oven 180C for 20mins. Garnish as desired and serve immediately with rice .
