Fried Fish in Aromatic Sauce


A tasty and delish fried fish with a spicy ,sweet and sourish sauce.A side dish that goes well with rice any time !
 Quick and easy to make and a real crowd pleaser!




500gm red snapper or sea bass
2 tbsp potato flour
½ tsp ground white pepper

Finely ground
1 stalk torch ginger bud
1 stalk lemon grass
5 fresh red chillies
2 cm young ginger
2 cloves garlic

Seasoning
Salt to taste
1 tbsp sugar
½ a cube anchovy stock cube/or 1 ¼ tsp granules

Garnishing/Topping
2/3 tbsp lime/calamansi  juice
1 tbsp sliced torch ginger bud
1 tbsp red chillies,sliced

1 tbsp thinly sliced kaffir lime leaves


Method :
Rub the fish with potato flour and grounded white pepper. Deep fry the fish both side. Dish out on serving dish .

In a wok, heat about 4/5 tbsp oil. Stir fry the grounded ingredients until fragrant. Add in salt and sugar to taste. Crumble in anchovy stock cube . Cook for about 2 mins and spread the sauce on the fried fish. Garnish the fish. Squeeze calamansi juice before serving.
