Inche Kabin-Nyonya Fried Chicken

Inchi Kabin is a Nyonya-style fried chicken marinated with spices.Some recipes uses thick coconut milk ,about 5 tbsp.While some uses brandy and marinate the chicken overnight.You can choose to do it either way!!If I am not mistaken , inchi kabin is famous among the Penang Nyonyas rather than in Melaka.But yet ,it is one of the menu listed in nyonya restaurants here.

10 pcs of drummet and wings

¾  tbsp meat curry powder
½ tbsp chilli powder
3 tbsp coconut milk
1 tsp honey
1 chicken cube (crumble) (optional)
¼ tsp salt
½ tbsp light soy sauce

Dipping sauce
5 shallots,sliced finely
2 red chillies,deseed,sliced finely
Juice of 1 lime
1 tbsp sugar
Enough worchestershire sauce to cover
(Note:You can lessen in the chilli powder if desired)

Marinate the drum met and wings for 3 to 4 hrs with the sauces or keep overnight in the refrigerator. Deep fry in semi hot oil until brown.
Dipping sauce: Mix all the ingredients together and serve as  a dipping sauce
