Spiced Banana Bread









A very simple recipe that can be prepared within 20mins excluding baking time . All the ingredients are blended  in a blender and poured into a baking tin. How simple can one want !! A suitable recipe for Ramadan as its time saving . The texture is more of a bread than cake and can be kept up to 2 days. You can even spread with a generous amount of butter or jam and enjoy it as a starter for your fast!!Another special ingredient used was the gula melaka /palm sugar instead of the normal sugar. It simply gives you an authentic flavour to your taste buds.


























The banana used in this recipe was the lady finger banana or better known in Malaysia as Pisang Emas.This banana is small, thin-skinned, and very sweet, suitable for today's recipe.


Ingredients
1 cup palm sugar(gula Melaka)can add more if desired
¼ cup olive oil
1 large egg
1 cup mashed very ripe bananas (1 used lady finger banana / pisang emas)
¾ cup buttermilk (3/4  cup milk mix with 1tbsp lemon juice,if do not have buttermilk)
2 cups flour (1 ½ cups all-purpose + ½ cup cake flour)
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon all spice powder

Topping
Diagonally sliced bananas for garnish.
1 tbsp light brown sugar,to sprinkle before baking

Directions
Pre-heat the oven to 400F.  Grease a medium size loaf pan.
Mix in a blender together the palm sugar, olive oil and egg until smooth and blended.  Add the mashed banana and buttermilk and blend until  incorporated.
Mix together the flour, baking powder, baking soda, salt and spice powder  Gently mix the dry ingredients into the wet ingredients just until nicely incorporated.
Pour into the baking pan and lay sliced bananas diagonally onto the top of the batter.  Sprinkle with brown sugar .
Bake at 400F for about 15 minutes.  Then turn the heat down to 350F and bake for another 30 minutes or until the bread is done.
























Cool for about 10 minutes before slicing.
