Spinach Leaf Chips/Kerepek Bayam









These chips are rather famous in the west side of Malaysia.Those who visit there normally buy the chips.Some have mentioned that is a delicacy of the Jawanese community ! I still have not come across this chips around  Melaka or Kuala Lumpur ,therefore decided to try it .Really a scrumptious snack.The chips stay crispy for a few days in  an air tight container.




Ingredients

1 bunch of spinach leaves –let it be fresh and choose the large variety
100gms corn flour
100gms  rice flour
½  tsp of alkaline water/air abu/air kapur sirih (optional)
1 cup coconut milk 0r 1 small box ready  made coconut milk
1 egg
Salt to taste
Enough oil to deep fry the spinach leaves
If preferred can add dried prawns about 1 tbsp (soak and pound coarsely)I had omitted this
50 ml water

To grind coarsely in a mixer:

1 tbsp cumin seeds
1 tbsp fennel seeds
1 tbsp coriander seeds
3 nips garlic




Steps:

Grind coarsely the spices with about 5 tbsp of water.Place the flours in a large bowl.Mix in the coarsely grinded ingredients, 1 beaten egg, coconut milk and salt .Stir until well combine.Add in about an additional of 50ml of water.Check the salt  and add more if necessary.The batter should not be too thick or too watery either. Leave the batter for about 10mins . Dip one leaf at a time and deep fry in semi hot oil until crisp.Turn occasionally the chips.Drain on a paper towel . Serve as a tea time snack or side dish .
