Palm Sugar Cup Cakes

Ingredients A
• 150g palm sugar/gula Melaka chopped
• 50ml water
• 100ml Evaporated Milk
• 3 large eggs
• 80g sugar

Ingredients B
• 180g flour (sieved)
• 1/2 tsp bicarbonate soda (sieved)
• ½ tsp baking powder

Ingredients C
• 100g grated coconut (a)
• 1/4 tsp salt (b)
• (a)&(b) } mix together and steam for 10 mins

1.Place chopped palm sugar in a saucepan and melt over low heat with water.. Add in Cool. Add in Evaporated Milk .Keep aside.
2.Whisk eggs together with castor sugar until light and fluffy.
3.Sieve dry ingredients and lightly fold in the beaten eggs.
4.Sieve the gula Melaka mixture solowly into the batter and stir until well combined.
5.Heat lightly greased little cups in prepared steamer; fill 1/2 full with the mixture and steam for 10 -15 mins on High Heat.The size of the moulds will determine how long to steam the cupcakes.The cakes rises up well therefore do not overfill it.
6.Set aside cakes to cool before removing them from the moulds.
7.Top each cake with a little coconut before serving.
