French Vanilla Chocolate Brownies

Many would be browsing ,trying to get some ideas on wanting to prepare something special for their luv ones.I have here a fudge like brownie recipe  , using Cadbury French Vanilla Chocolate bar.A bar weighs about 180gms.You need 2 bars ,coz  the chocolates will be used for the filling and topping.Most brownies uses cocoa powder, but I prefer to use melted chocolate.I have added nuts, you can omit it ,if you dont like them.

4 ounces (120 grams)French vanilla Cadbury Chocolate, coarsely chopped
1/2 cup (113 grams) unsalted butter, cut into pieces
1 cup (200 grams) caster sugar
1 teaspoon vanilla extract
2 large eggs
3/4 cup (95 grams) all-purpose flour
¼ tsp baking powder
1/4 teaspoon salt
100gms mixed nuts(chopped almond,hazelnuts and walnuts)




Chocolate Ganache:
3 ounces (90 grams) French vanilla cadbury chocolate, chopped
1/3 cup (80 ml) heavy whipping cream(double cream) (35% butterfat)
1 tablespoon (14 grams) unsalted butter
1 tsp cocoa powder(optional) (to darken the ganache)



                                                                   

Chocolate Brownies: Preheat oven to 170 degrees C and place rack in center of oven. Butter, or spray with a non stick vegetable spray, an 8 inch (20 cm) square baking pan. 
Melt the chocolate and butter in a large stainless steel  bowl placed over a saucepan of simmering water. Remove from heat and stir in the sugar. Next, whisk in the vanilla extract and eggs, one at a time, beating well after each addition. Finally, stir in the flour and salt.
Pour into the prepared pan and bake for about 25-30mins minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from oven and let cool on a wire rack. 


Chocolate Ganache:  Melt the chopped chocolate, cream, and butter in a stainless steel bowl placed over a saucepan of simmering water. Once the chocolate have methed ¾ way you can close fire and keep stirring until chocolate have melted fully.Remove  and let cool to room temperature and then spread the ganache over the brownies. The brownies tastes better after 30mins refrigeration. They can also be frozen.

Decorations:I used caramel sauce to drizzle n gold dragees(I got both of them from Bakers Choice,Batu Berendam,Melaka) and did the heart shape chocolates with pink chocolate(which is available locally in MYDIN)using heart cutters.Place the cutters on an aluminium foil, pour spoonful of melted chocolate and leave it at room temperature for 30mins before placing them in the fridge.After about  an hr ,slowly press down the chocolate heart  from the cutter.
