150gm chicken meat
1 cup potato flour
4 cili padi/birds eye chilli(chopped finely)
4 sprigs curry leaves
1 lemon grass(cut finely)
½ a bunga kantan /torch ginger(shredded finely)
Salt to taste
2 tbsp butter
Sliced the chicken meat as thinly as you can. Heat 2 cups oil.
Coat each piece of chicken on the potato flour both sided and deep fry in the hot oil .Do the same with the rest of the chicken pieces until finish.Dish out and place fried chicken pieces on paper towels.
In a wok , add in butter.Melt the butter in low heat.Saute curry leaves, cili padi, lemon grass and bunga kantan.Once aromatic, increase the heat.Add in chicken pieces and quickly coat it with the herbs .Add salt to taste.Dish out and serve immediately.
