Cucur Badak

Kuih for breakfast or Tea time .





For the dough
300gms sweet potato,peeled and cut into chunks
50-60gms plain flour
¼ tsp salt

For the filling
20gms red chillies,cut into a few parts and soaked in water for 20mins
3 shallots
1 lemon grass,cut into a few parts
1 tsp dried prawns,soak in water and then squeeze out the water,pounded roughly
70gm grated coconut,the white part only,pounded coarsely
Salt and sugar







To prepare the dough
Steam the sweet potatoes until tender and mash it while it is still hot.Leave to cool.
Mix in salt and flour to the sweet potatoes.Knead lightly to form a pliable dough.Add more flour if the dough is sticky.
To prepare the filling
Heat oil in low fire.Pound dried chillies and shallots finely.Pound dried prawns separately.Fry spice paste for about 3 to 4mins until fragrant.Add in lemon grass and pounded dried prawns.
Cook further for another minute.Add in coarsely pounded coconut,salt and sugar to taste.Saute further.Leave the filling to cool before using.Discard lemon grass.
To make the kuih:
Take a small amount of dough and make a well in the center.Stuff with about 1 tsp or more of filling.Gather the edges to seal the dough around the filling.Shape it into a ball and flatten slightly .Repeat with the remaining dough .Heat oil in a wok.Pour enough oil to deep fry about 2 to 3 cakes.
Fry over medium heat until golden brown on both sides .Remove and drain on a paper towel.
