Spinach N Cabbage Prathas

200gms Spinach, shredded
100gms Cabbage, shredded
2 cups Whole wheat flour (atta)
1/2 cup Gram flour (besan)
Salt to taste
1 tsp Red chilli powder
1/4 tsp Carom seeds (ajwain)
1 -2 Green chillies, chopped
1 medium onion(chopped)
2 tbsp oil
1/2 cup Milk

Place whole wheat flour atta and gram flour in a bowl. Add salt, red chilli powder, carom seeds, green chillies, onions, cabbage, spinach, three teaspoons of oil and mix well. Mix milk with three fourth cup of water and add to the flour and knead into a soft dough. Cover the dough with damp muslin cloth and set aside for fifteen minutes.Divide into small rounds , roll out and flatten into thick prathas in a round shape . Heat a tawa, place a prata on it and cook on one side for half a minute. Flip and cook for another half a minute. Then turn the side again and coat with some ghee all around the pratha and cook. Flip again coat with a bit of ghee all around . Cook till both sides are evenly done. Serve with mango chutney , raita, curries of your choice.Serve the pratha within an hour and best eaten when hot.

I only made five prathas. The left over dough I flatten them into round shapes and placed in between plastic sheets to avoid sticking. Then I placed them in a bigger plastic sealable bag and kept them in the freezer. In this manner you can take out and make when you want it.Since the pratha dough is uncooked, try using up within a week or two..If you want to keep it longer, cook each prathas without ghee and leave them to cool. Then place them in between plastic sheets and freeze them. The prathas will last more longer.Save the trouble of preparing them all the time and avoid wastage!! When you want to prepare, cook in the same manner but this time coat with some ghee.

Variations:At times I use mustard green with cabbage, can use purple cabbage also as it gives a beautiful colouring or a combination of semi boiled potatoes(grated) with cabbage.
