For the ramadan month would like to share a dessert recipe with all of you. Great pudding ,something cold to open
your fast with . Try it out.
800ml coconut milk
100gms sugar
50gms corn flour
1 tsp vanilla essence
Strawberry sauce
3 fresh strawberries
1 tsp sugar
1 tsp cornflour mix with water
Decoration
Fresh cut strawberries
Heat up coconut milk in a heat proof bowl.Add in sugar and stir unti dissolve. Add in a tsp at a time cornflour.Keep stirring until cornflour has dissolve in the coconut milk.Do the same until all the cornflour has been mix into the coconut milk. Stir at all time as the mixture will start thickening. Cook for further 40mins the mixture stirring at all time.Use the smallest heat when preparing the pudding as high heat can cause the pudding to cuddle faster or burn.
Pour into serving glasses or in a square pan.Leave in room temperature for half an hour then refrigerate the pudding.Pour strawberry sauce on pudding and decorate with fresh strawberries.
Strawberry sauce
Puree the fresh strawberry with ¼ cup of water.In low heat cook the strawberry puree and sugar.Thicken the sauce with cornflour mixture.Leave to cool before using.
Tips: Glaze the fresh strawberries with strawberry syrup to give a glossy look.
