Today is a special day : My son’s birthday,Next week my daughter’s birthday and end of the month my wedding anniversary…all falling on the month of March.So thought of blogging a sweet delicacies, a chocolate cupcake.
This rich moist cake is adapted from DayangKek .You can get the recipe from her blog in Malay.She is a blogger friend and a talented woman specializing in Kek Sarawak /Layered Sarawak Cakes.Even with kids at hand she busiest herself with the creation of her beautiful layered cakes. You can check out her site to see the many designs and the fantastic part is you can order the cakes as well(depending on the distance).At present she is busy conducting classes on baking layered cakes.Check out her site .
Ok, coming back to the moist cupcakes, the cake was delicious as well moist. I decorated with melted chocolate .I must admit that I prefer using fondant to make flowers rather then icing and secondly my tool tubes at hand are rather limited and I just made do with what ever tubes I had .
6oz butter
14oz castor sugar
3 eggs
7oz hot water
Ingredients B
1 tsp Nescafe powder
1 tsp hot water
1 tsp vanilla essence
1 tsp chocolate EMULCO
Dry Ingredients
8 oz High protein flour( I used Superfine flour)
2 ½ oz cocoa powder
1 tsp soda bicarbonate
1 ½ tsp baking powder
Direction
Beat butter and sugar until fluffy.
Add eggs one by one.
Mix Nescafe powder with 1 tsp hot water .Then add in all the ingredient B .
Combine all the dry ingredients in a bowl and sieve them. Fold in the dry ingredients t with a spatula little at a time until the dry ingredients are well combined with the batter.
Then start mix in hot water and stir until the mixture is creamy.
Place a spoonful into prepared paper cups and bake at 170C for about 20mins.
Or you can bake in a round pan ,in a preheat oven 170C for 50mins to an hour .
Decorate with melted chocolate and butter icing or chocolate rice.
